El-gin is small batch distilled in a traditional copper pot still over a direct heat which allows the distiller to manually control the distillation leaving the resultant flavour profile to the distiller’s craft rather than technology. After rigorous nosing and tasting, each batch is hand bot-tled, sealed and labelled.
