The core steel is the most advanced powdered steel that Hitachi offers: the ZDP-189, reaching an unmatched hardness of HRC 65 to 67. This is achieved by over 3% of Carbon content in the steel (White 2 has about 1%, Blue 1 has about 1.25%, that tells you something) meaning the Sukenari ZDP-189 will offer insane edge retention and sharpness. Yet it is a stainless steel because of the added Chromium. Overall, the ZDP-189 has very similar composition to the Cowry-X steel from Daido.

The ZDP-189 blade is forged with Nickel damascus stainless steel and mirror polished, along with the rounded choil and spine, super thin behind the edge, it is truly a master-piece from Master Hanaki Nobuo. '

Fantastic Foam and Spectacular Steamer
Best electric steamer/frother evvveerrrrr! I've had several froth/steamers over the years and this is the BEST one by far. It's compact, quiet, and makes thick gorgeous foam. You just dial to one of your four choices (thick foam, light foam, hot but no foam for say hot chocolate, and cold foam for iced drinks) and push and about two mins later, it's done. It's very compact and takes up almost no space on my kitchen counter. The blue base is also very pretty and the canister is easy to clean. Bonus is that you get two mixer pieces, the second one easily stores under the base. I use oat and almond milks primarily, and I get great results with thick foam! Love this little froth/steamer!!

Failed Shortly After Purchase and Required Too Much Effort to Resolve
This product was purchased as a holiday gift for my spouse. Out of the box the product made a load mechanical noise (similar to a baseball card in bicycle spokes) – but it produced a nice heated frothed milk. Less than 3 months after first using the frother, it completely stopped frothing. The heating unit continued to work but the spinning disk did not move. I contacted the seller and within 48 hours they requested a video of proof that the frother was no longer working. I provided the requested video 6 hours after receipt of seller's request. Since then, I have not received any communications, and my follow up emails receive NO RESPONSE. Amazon should consider pulling this product and seller from their website. UPDATE: After multiple follow-up contacts over a month's time, manufacturer eventually issued a full refund.
